Soft Jowar Bhakri (Hot-Water Method)

You need
- 1 cup fine jowar (sorghum) flour
- 1 cup drinking water
- ¼ tsp rock salt
- ½ tsp cold-pressed oil
- Extra flour for dusting
Method
- Bring the water to a rolling boil with salt and oil in a heavy saucepan.
- Turn heat to low, add jowar flour, and stir vigorously until absorbed. Cover and rest 5 minutes.
- Transfer warm dough to a flat parat. Wet hands with water and knead for 3 minutes until smooth.
- Divide into 4 balls. Roll out gently between parchment paper or with a light rolling pin.
- Cook on a smoking hot cast-iron tawa. Flip once, press lightly with a clean cloth, and let puff.
- Serve immediately warm with hot dal and sabzi.
👨👩👧 Whole-family version: For younger children, brush lightly with a few drops of pure desi ghee. For elders, make the dough extra soft with an extra tablespoon of warm water.
Fragrant Foxtail Vegetable Pulao

You need
- ¾ cup foxtail millet, soaked 4 hours
- 1 small onion & carrot, diced
- ¼ cup green peas & beans
- 1 tsp whole cumin & 1 bay leaf
- 1.5 cups water, 1 tsp oil
- Salt, ginger-garlic paste
Method
- Rinse and drain the soaked foxtail millet thoroughly.
- Heat oil in a heavy saucepan. Add cumin seeds, bay leaf, and ginger-garlic paste until fragrant.
- Add chopped onion, carrot, green beans, and green peas. Sauté on medium flame for 3 minutes.
- Add drained foxtail millet, salt, and 1.5 cups of water. Bring to a gentle boil.
- Cover with a tight lid, reduce flame to low, and simmer for 12 to 14 minutes until water is absorbed.
- Turn off flame and let rest covered for 5 minutes. Fluff gently with a fork and serve with raita.

Bajra Methi Missi Roti

You need
- ¾ cup bajra (pearl millet) flour
- ¼ cup besan (gram flour)
- 1 cup fresh methi (fenugreek) leaves, chopped
- ½ tsp ajwain (carom seeds)
- ½ tsp oil, salt, pinch turmeric
- ¾ cup boiling water
Method
- In a mixing bowl, combine bajra flour, besan, chopped methi leaves, ajwain, turmeric, and salt.
- Pour boiling water into the bowl and stir with a spatula until flour is absorbed. Cover for 5 minutes.
- When comfortably warm, knead with wet palms for 3 minutes into a soft, pliable, smooth dough.
- Pinch a golf-ball sized portion, dust lightly with bajra flour, and roll out between parchment paper.
- Transfer gently onto a hot cast-iron tawa. Cook until brown freckles appear on both sides.
- Serve steaming hot with fresh homemade curd and green chutney.

Multi-Millet Fermented Steamed Idlis

You need
- ½ cup foxtail millet
- ½ cup little millet
- ½ cup whole skinless urad dal
- ¼ tsp methi seeds (fenugreek)
- Water for grinding, salt to taste
- Oil to grease idli moulds
Method
- Wash and soak foxtail millet, little millet, urad dal, and methi seeds together for 6 hours.
- Drain and grind in a wet grinder or blender with minimal cold water into a smooth, fluffy batter.
- Transfer to a deep container, add rock salt, and let ferment in a warm spot for 8 to 10 hours until risen.
- Gently stir the fermented batter. Grease idli plates with a few drops of oil.
- Pour ladlefuls into moulds and steam on medium-high heat for 10 to 12 minutes.
- Let rest 2 minutes before unmoulding with a wet spoon. Serve piping hot with sambar and coconut chutney.
