Soft Rolled Jowar Phulkas (Ukad Method)

🍽 Serves 2⏱ 20 minutes~115 kcal3.2 g protein

You need

  • 1 cup fine Jowar (Sorghum) flour, freshly milled
  • 1 cup filtered water
  • 1/4 tsp rock salt
  • 1/2 tsp cold-pressed sesame oil
  • 2 tbsp dry jowar flour for rolling dusting

Method

  1. Bring 1 cup of water to a rolling boil with rock salt and 1/2 tsp oil in a deep saucepan.
  2. Turn heat to low; add 1 cup jowar flour all at once. Stir briskly with a wooden spoon for 30 seconds.
  3. Cover tightly with a lid; turn off heat and let steam undisturbed for 10 minutes.
  4. Transfer warm dough to a large plate. Wet hands with cool water and knead firmly for 3 minutes until smooth.
  5. Divide into lemon-sized balls. Dust board with dry flour and roll gently with light pressure into 6-inch discs.
  6. Place on a smoking hot tawa. Brush top with 1 tbsp water. When water dries, flip and cook second side for 1 minute.
  7. Transfer onto open flame or press with a clean cotton napkin until the roti balloons into a phulka!

Crispy Instant Ragi Dosa

You need

  • 1/2 cup Ragi (Finger Millet) flour
  • 2 tbsp fine Rice flour (for crispness)
  • 1/4 cup fresh low-fat curd (dahi)
  • 1 green chilli & 1/2 inch ginger, finely minced
  • 1/2 tsp cumin seeds & 1 tbsp chopped coriander
  • 1 tsp cold-pressed oil for tawa brushing

Method

  1. In a mixing bowl, whisk ragi flour, rice flour, curd, and 1 cup water into a thin, watery batter (like rava dosa batter).
  2. Add minced green chillies, ginger, cumin seeds, fresh coriander, and rock salt. Rest batter for 5 minutes.
  3. Heat a dedicated non-stick or cast-iron tawa on high heat until sizzling hot. Lightly grease with 1/2 tsp oil.
  4. Stir the batter from the bottom; pour a ladleful starting from the outside rim toward the center.
  5. The batter will form natural lace-like perforations. Drizzle 1/4 tsp oil around the edges.
  6. Cook on medium-high flame for 3 minutes until the base turns deeply crisp and edges lift spontaneously.
  7. Fold gently and serve hot with fresh coconut-coriander chutney and warm vegetable sambar.

Kuttu (Buckwheat) Vegetable Cheela

You need

  • 1/2 cup Kuttu (Buckwheat) flour
  • 1/4 cup finely grated bottle gourd (lauki, for moisture)
  • 1 green chilli & 1/2 inch ginger, finely grated
  • 1/4 tsp roasted cumin powder & rock salt (sendha namak)
  • 2 tbsp finely chopped fresh coriander
  • 1 tsp cold-pressed oil for tawa

Method

  1. In a mixing bowl, combine kuttu flour, grated bottle gourd, ginger, green chilli, and rock salt.
  2. Gradually add 1/2 cup warm water, whisking into a smooth, lump-free pouring batter.
  3. Fold in fresh coriander leaves. Let the batter rest for 5 minutes so buckwheat starches hydrate.
  4. Heat a dedicated non-stick or seasoned cast-iron griddle on medium heat. Brush lightly with oil.
  5. Pour a ladle of batter and spread gently into a 5-inch circle.
  6. Cook for 2.5 minutes until edges crisp and bottom is deep golden. Flip and cook second side for 1 minute.
  7. Serve hot with 2 tbsp fresh homemade mint chutney and 1 katori fresh dahi.

Slow-Simmered Dal Panchmel (5-Lentil Pot)

You need

  • 1/4 cup each: Chana dal, Toor dal, Yellow moong dal, Green moong dal, Urad dal (soaked 1 hr)
  • 2 medium ripe tomatoes, finely chopped
  • 1 inch fresh ginger & 2 green chillies, slit
  • 1/2 tsp cumin seeds & 1/4 tsp turmeric powder
  • 1/2 tsp Kashmiri red chilli & pinch pure dissolved rock hing
  • 1 tsp cold-pressed oil for royal tadka & fresh coriander

Method

  1. Drain the soaked 5 lentils. In a pressure cooker, combine lentils, turmeric, salt, and 3 cups water.
  2. Pressure cook for 4 whistles on medium flame until all lentils are completely tender and blended.
  3. In a heavy tadka pan, heat 1 tsp oil. Add cumin seeds, dissolved pure hing, and ginger-chilli.
  4. Add chopped tomatoes and Kashmiri chilli powder; cook for 4 minutes until oil separates from masala.
  5. Pour the aromatic tempering into the cooked lentils. Whisk lightly with a wooden churner (*mathani*).
  6. Simmer over low heat for 5 minutes to achieve a velvety, royal consistency. Squeeze fresh lemon juice.
