🍽 Serves 2⏱ 15 minutes~320 kcal19 g protein

You need

  • 1 cup yellow moong dal (soaked 3 hours or overnight)
  • 60 g fresh paneer, finely crumbled or grated
  • 1 small green chilli & 1-inch fresh ginger
  • 1 small onion, finely diced
  • 1 tsp cold-pressed oil for cooking
  • ½ tsp cumin seeds & salt to taste

Method

  1. Drain the soaked moong dal and blend with ginger, green chilli, and 3 tbsp water into a smooth batter.
  2. Stir in cumin seeds, salt, and finely chopped onion.
  3. Heat a seasoned tawa on medium heat; brush with a few drops of oil.
  4. Pour a ladle of batter and spread into a thin round circle using the back of the ladle.
  5. Sprinkle crumbled paneer evenly across the top, press gently with spatula, cook 2 minutes, flip and cook 1 more minute.
  6. Serve immediately with fresh mint chutney and 2 tbsp curd.

👨‍👩‍👧 Whole-family version: For young children, omit green chillies and add grated mild cheese or carrot shreds.

Quick Soya Keema Bhurji Wrap

🍽 Serves 2⏱ 15 minutes~340 kcal24 g protein

You need

  • 1 cup soya granules or mini chunks (rehydrated in hot water)
  • 2 whole wheat rotis or multi-millet wraps
  • 1 small onion & 1 green capsicum, finely diced
  • 2 tbsp Executive Bhuna Masala (from Sunday prep)
  • 1 tsp cold-pressed oil & ¼ tsp garam masala
  • 2 tbsp chopped fresh coriander & lemon juice

Method

  1. Soak soya granules in boiling water for 5 minutes; drain and squeeze out all excess liquid thoroughly.
  2. Heat 1 tsp oil in a pan; add diced onions and capsicum. Sauté on high heat for 90 seconds.
  3. Add 2 tbsp prepped Bhuna Masala and stir for 1 minute until fragrant.
  4. Toss in squeezed soya granules, garam masala, and salt. Cook on medium flame for 3 minutes, stirring constantly.
  5. Finish with fresh lemon juice and chopped coriander. Cool for 3 minutes.
  6. Spread evenly across warmed rotis, roll tightly, and wrap in parchment paper.

One-Pot Foxtail Millet Khichdi

One-Pot Foxtail Millet Khichdi

🍽 Serves 2⏱ 15 minutes~360 kcal15 g protein

You need

  • ½ cup foxtail millet (rinsed thoroughly)
  • ½ cup yellow moong dal (rinsed)
  • 1 small onion & 1 carrot, finely diced
  • ½ cup green peas & 1 small tomato
  • 1 tsp desi ghee & ½ tsp cumin seeds
  • ¼ tsp turmeric, pinch of hing, 3 cups water & salt

Method

  1. Heat 1 tsp ghee in a 3-liter pressure cooker; add cumin seeds and hing. Let crackle for 20 seconds.
  2. Add diced onion, carrot, green peas, and tomato. Sauté for 2 minutes.
  3. Add rinsed foxtail millet, yellow moong dal, turmeric, salt, and 3 cups of water.
  4. Close pressure cooker lid; cook on high flame for 2 whistles, then turn heat to low for 3 minutes. Turn off stove.
  5. Let pressure release naturally for 5 minutes. Open lid and fluff gently with a fork.
  6. Serve steaming hot with 2 tbsp fresh toned curd and a roasted papad.

👨‍👩‍👧 Whole-family version: Very soothing for young toddlers and elderly parents; mash slightly and add a drop of warm ghee.

15-Minute Homestyle Rajma Bowl

🍽 Serves 2⏱ 12 minutes~410 kcal18 g protein

You need

  • 1.5 cups boiled rajma (from Sunday freezer/fridge prep)
  • 3 tbsp Executive Bhuna Masala (from Sunday prep)
  • 1 cup cooked brown rice or jeera rice
  • ½ cup warm water or reserved bean broth
  • ½ tsp garam masala & 1 tsp kasuri methi (crushed)
  • Fresh coriander leaves & lemon wedges

Method

  1. Heat a pan on medium flame; add 3 tbsp prepped Bhuna Masala.
  2. Add boiled rajma and ½ cup water or bean broth; stir well to combine.
  3. Bring to a vigorous boil, then mash a few beans with the back of a ladle to thicken the gravy.
  4. Lower heat and simmer for 5 minutes so beans absorb all masala aromatics.
  5. Stir in garam masala and crushed kasuri methi; finish with fresh lemon juice and coriander.
  6. Spoon over warm brown rice and pack into an insulated steel container.
